Tipicular’s Rhubarb Lemonade – Recipes

I drank this creation at the Deli Duel on June 19, 2011.  It was created by Tipicular and I was blown away as it was a Gin based drink.  I spoke with Whitney from Tipicular and I could immediately feel her passion for food.  I emailed them for the recipe and Whitney from Tipicular was glad to share.  So here it is in her words…enjoy.

1oz Victoria Gin
1oz Lemon juice
1 oz Rhubarb Caramel
10 dashes Orange bitters

The Rhubarb Caramel is a long process but it can be done.
In a large, heavy bottom sauce pan place 6cups of sugar & 1cup of water. Yep…6 to 1. Stir to combine and turn the burner on to medium. Cook slowly, stirring very frequently until it comes to the boil, very quickly it will come to the “soft thread” stage.
When it forms a thin almost recognizable thread add 6 cups of roughly chopped rhubarb on top.
Still with me?
Now slowly cook until the rhubarb turns brown and soft, this will take at least an hour.
Strain the rhubarb from the syrup with a large mesh strainer(do this in batches)

Working with sugar can be fun but it can also be dangerous. Hot sugar can burn your skin very badly, very easily. Work with caution & in small batches until you gain more confidence with the sugar.

Once you have your Caramel…

Place all of the items in a shaker filled with cracked ice. Shake vigorously and strain into your favourite martini glass. If you’re feeling really energetic, you can hit your local farmers market to find an edible organic flower for the garnish.
